Features
When bakers want the overall performance of a gas deck oven with masonry and concrete foundation and concrete reinforced walls, but have less space and budget than required for the TAG oven, then the Stoneheart™ (by Verona Forni) or Tubix™ (by Bassanina/Forma) hearth oven is the answer. These ovens are manufactured to our specifications in Italy by two leading oven manufacturers and offer the following features:
- Four baking decks, each with two baking chambers per deck (8 or 12 baking chambers/oven)
- Baking chamber window width of 600mm (23.6”)
- Hearth stone depths from 1600mm (63”) to 2400mm (94.5”), covering the gamut of baking capacity requirements for retail and small wholesale bakeries
- Vapor tube diameter of 27mm, which is the standard European size dimension
- Either a single steam generator per deck (Model Stoneheart™ 12XXS or Tubix™ 420 – located in the base of the oven) or two steam generators per deck on each side (Model Stoneheart™12XXD). The later provides instant and evenly distributed steam to each baking chamber loaded with dough, upon demand, but does require a wider footprint
- Masonry and concrete construction in the base, with concrete placed in the walls of the oven for increased heat retention (energy savings) and thermal mass for quick recovery than all-steel oven construction during and between bakes
- Ample use of high-temperature insulation for zero-clearance rating on sides and back of oven (though some clearance is required to construct the oven)
